Chef/Proprietor, Lynne Marie Sanders

Chef/Proprietor, Lynne Marie Sanders, trained in France’s top establishments. After completing her professional training course at the Cordon Bleu in Paris she went on to train with super-chef Alain Ducasse at Louis XV in Monte Carlo and at Le Bastide de Moustiers in the haute Provence. She also worked with Michelin starred chefs Jean-Louis Nomikos, Roland Durand and Jacaues Cagna in Paris, and well-known pastry chef, Gerard Mulot of Patisserie Mulot in Paris.  Like her mentor, Alain Ducasse, she believes in a pure style of cooking with an emphasis on quality ingredients, minimal handling and the pure expression of individual flavors.

Manager and Sommelier, Elodie Germain

Elodie joined Bistro Aix in 2012 as a head waitress, then assistant manager and now General Manager.  She is the ‘face of Bistro Aix’ to most of our customers as she remembers your name, where you like to sit and the wines you most enjoy.  In addition to a very high level of cool-customer-service, she is passionate about ‘natural’ wines and has been broadening the wine list at Bistro Aix to include these interesting and unusual wines.  Elodie has successfully completed three levels of the Wine and Spirit Education Trust qualifications.

Head Chef, Chabane Belhadj

Chabane joined Bistro Aix in 2012 after working in many of London’s top establishments, including the Bleeding Heart, Harry’s Bar, Smithfields, the Albion, and Punch Bowl . He has proved to be an excellent leader in maintaining Bistro Aix standards – he’s a master-organiser and a very talented chef.

Pastry Chef, Iuri Karp

Iuri has been with Bistro Aix since 2008, when he came as a kitchen assistant. He trained with Lynne and our chefs in all areas of the kitchen but is most passionate about desserts – he is responsible for our consistently amazing dessert menu.
